My favorite Pancakes-Oatmeal Buttermilk
I went searching for a pancake recipe that could help me get through this pandemic, since going to my favorite place was not an option. I tried a couple, and made a few tweaks. Here’s the one that has become my go-to pancake recipe.
Oatmeal Buttermilk Pancakes
2 cups Buttermilk
1 2/3 cups thick rolled oats
1/2 cup flour
2/3 cup cornmeal
2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon backing soda
1 1/2 teaspoons salt
3 eggs well beaten
1/4 cup vegetable oil
oil for pan
In a large bowl, soak the oats and buttermilk for at least 20 minutes before continuing.
Mix in dry ingredients, not stirring more than necessary.
Mix eggs in a separate bowl, add oil and mix, then add to other ingredients.
Once mixed, you’re ready to heat your pan, I use medium heat.
I use a little oil in the pan, but if you have a non-stick pan you may not need to. For larger pancakes drop by 1/2 cup scoops and spread the thick mixture out evenly. For smaller pancakes, use less batter.
After you’ve seen some bubbles, it’s time to check to see if you can get the spatula under the pancake to flip nicely, or if it needs a little more time. Gauge the cooking time for the second side by how long it took to cook the first side, cooking it a little less time.
Serve however you like pancakes. I love mine with butter and strawberries.
